🍋 Sunburst Summit Chicken

Serves: 24 | Time: 1 hour (plus marinating)

🧾 Ingredients:

  • 12 large chicken breasts

  • 6 cups Olive Garden Italian Dressing

  • 1 tablespoon lemon zest

  • Salt and pepper to taste

  • Optional: Fresh herbs for garnish (basil, parsley, oregano)

👨‍🍳 Instructions:

  1. Prep the chicken:
    Rinse and pat dry the chicken breasts. Slice each breast in half lengthwise to create 24 portions.

  2. Marinate:
    In a large resealable bag, combine the chicken, Italian dressing, lemon zest, salt, and pepper. Seal and massage to evenly coat. Refrigerate for at least 2 hours, or overnight for best flavor.

  3. Bake:
    Preheat your oven to 375°F. Place the chicken (with marinade) in a hotel pan. Bake for 30–45 minutes, or until internal temperature reaches 165°F.

  4. Optional sear:
    For added flavor and texture, sear the baked chicken on a hot grill for 1–2 minutes per side, then return it to the pan and pour the marinade over top.

  5. Rest and serve:
    Let the chicken rest for a few minutes. Garnish with fresh herbs if desired and serve with your favorite sides.
